4/14: Week in Eats

Scotch eggs & peas – really liked this combo (especially with soft boiled eggs šŸ˜) P.S. There are lots of different methods for boiling eggs. I like to boil the water first thenĀ place the eggs in, cooking 7 minutes for soft boiled orĀ 15 minutes for hard boiled. Very important to have an ice/water bath ready for when you take them off the heat!20140416-212040.jpg

The best, most filling, most wonderful low carb lunch ever: dill marinated chicken with spicy brown mustard covered sweet potato and broccoli. Nothing revolutionary here–just made me satisfyingly stuffedĀ in the midst of sugar cravings šŸ‘20140417-154852.jpg

Big arse chicken salad featuring roasted beets, avocado, carrots, tomato, green onion, cashews and olives (+greek dressing) Doesn’t look like much, but all the flavor combinations were spot on.20140419-172052.jpg

Also switched up the cardio this week. One day I treadmilledĀ forĀ 45 minutes just for the calorie burn. Another day I did 50 jumping jacks as a warm up, then treadmilled for 30 minutes, doing 20 squats at every half mile. It was definitely harder than just a steady run! Keep having to remind myself to focus on diet though. That is what counts.
