Banana Apple Muffins

I’m on Pinterest a lot. Mostly because I got tired of saving recipe links to an exhaustive Word doc every time I wanted to experiment in the kitchen. Thanks Internet!

Perhaps Pinterest is a lot like Digg used to be, where people submit content regularly but only 1% of it makes it to a central “popular” page via an unknown algorithm. In any case, that has never happened to me. Except this one time I posted paleo banana apple muffins. Admittedly, it’s a run-of-the-mill type paleo muffin recipe: add a nut based flour, eggs, fruit and your choice of natural sweetener. So I was rather perplexed to see it take off like it has with hundreds of repins. With fruit out the wazoo at my house and Whole30 starting in a few days, I decided to see if there was something indeed special about this recipe. And there is! These are great at room temp, completely cooled. The moisture and flavor sets in after a few hours out of the oven.SONY DSC
