My husby turned 32 yesterday. In order to ease his geriatric transition, I cooked him paleo pancakes & bacon. I’ve never had luck getting a good consistency from paleo pancakes, but these were effortless. For the blueberry sauce, I cooked 1/2 c. blueberries on low heat with a bit of water, coconut sugar & lemon juice until softened.
Zucchini & sweet potato hash. Spent a lot of time getting a lot of extra water out of the zucchini and it still didn’t turn out crispy, but it was pretty good. Cooked the hash in bacon fat so that always punches up the flavor.
Mexican meatza is always a home run. Needs a little avocado on top!
Leftover pulled pork, eggs and fresh squash from my moms garden. A solid meal and boy, taking pictures using the natural light in the mornings sure does make a difference.
Buffalo shrimp (sauce is simply butter and hot sauce) with eggs and master cooling agent avocado. Need to find some Kerrygold butter so I can make more ghee. We are missing it in this house and will need it for another round of Whole30 in T minus 2 weeks!
