…I’m baaaack. Back to blogging, cooking every day and meal planning 😊 I kind of enjoyed not having to think so much about food in Costa Rica, but that came at the expense of bad decisions and truly horrendous bloat. It’s amazing how the body reacts to change. Going from low carb 24/7 to mostly beans, rice and bread at every meal ain’t pretty.
Fair warning that my meals this week are mucho BO-RING. The below photos don’t need links to recipes or even descriptions since most people could deduce the ingredients in them. They were simple and just what I needed.
This one’s a little less obvious. Zucchini hollowed out and stuffed with ground beef, topped with marinara sauce. Husby got the fun cheese-covered ones, but even the plain were delicious.
I’ve also been mixing either raw apple cider vinegar or fresh lemon juice with warm water in the mornings. This is supposed to wake the body up, aid digestion and help the detox efforts along 👍
