I made quite a few healthy meals this week, but am only sharing this one. Why? Because it’s the only one I really enjoyed. And bonus points- it’s also the easiest to put together.

I had a long paragraph planned about messing up this week, eating too many carbs and letting cravings take over. It seems the only real lesson here is on the importance of sticking to the plan. I’m ridiculous about meal planning. Literally had the 30 days of Whole30 planned out months in advance. Bad things happen when I deviate from the plan. Things like jelly beans, pretzels, etc etc. For the next few weeks, I’ll be stricter with the diet and more lax at the gym. Hoping to share many more good recipes next week!
